Moong dal/yellow mung lentil khichdi is a popular Indian comfort food which is healthy, nutritious and easy to make. It is light on stomach and easy to digest. It is prepared with moong dal and rice and you can add any vegetable in it. I have added carrot in it and I love the flavor of garlic and asafoetida/hing in it.


 Many variations can be given to this simple and classic khichdi. It is a one pot meal which can be served with chutney, pickle or yogurt. In India, we make it often when we want to have light meal for dinner.



Lets start with the recipe :

Ingredients :

  • 1/2 cup moong dal/lentil
  • 1/2 cup rice
  • 2 finely chopped carrot
  • 1 chopped green chilly
  • 4 chopped garlic cloves
  • 1/2 cup chopped coriander leaves
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • pinch of pepper
  • pinch of asafoetida/hing
  • 3.5 cups of water
  • Salt according to taste
  • 1 tablespoon clarified butter/ghee
  • 1/4 teaspoon red chilly for garnishing
Preparation :
  • Rinse wash and drain moong dal and rice together
  • Soak them in water for 10 minutes
  • Heat ghee/butter in a pressure cooker
  • Add cumin and asafoetida/hing in it
  • When it splutter, add garlic, green chilly, carrot and coriander leaves
  • Add salt, pepper and turmeric in it
  • Cook it on medium flame and stir
  • Drain the water, add moong dal/lentil and rice in it
  • Stir it for a minute and pour water in it
  • Close the lid and pressure cook it for 5 whistles
  • Check the consistency of khichdi, adjust the consistency according to taste
  • Garnish it with red chilly
  • Serve it with yogurt or pickle

Cauliflower Carrot Manchurian with thick gravy is a tangy and delicious recipe which is a famous dish in Indian Chinese Menu. Manchurian recipe is altered to suit the Indian palette with addition of Indian spices and flavors. You can give lot of variations to Manchurian. It can be made using only cauliflower without adding carrot too. I love the flavor of carrot in that is why I have mixed both in equal quantities.

It can be serve as a starter, snack or as a side dish with fried rice or noodles. These dumplings are crispy from outside and gooey from inside. When you add them to this tangy and spicy gravy, it becomes a great combination. You will love the flavor in every bite.

Ingredients :
  • 1/2 medium sized cauliflower /gobhi
  • 4 grated carrots/gajar
  • 1 tablespoon of refine flour/maida
  • 3 Spring onion chopped white and green portion
  • 1 chopped red chilly
  • 1 chopped green chilly
  • 5 crushed medium size tomatoes
  • 2 finely chopped medium sized onions
  • 10 chopped garlic cloves
  • 1 teaspoon grated ginger
  • 2 tablespoon soy sauce 
  • 1 1/2 spoon vinegar
  • pinch of sugar
  • 1 teaspoon dry corn flour 
  • 1 teaspoon cornflour mix in 1 tablespoon water
  • Salt according to taste
  • 1 teaspoon chaat masala
  • 1 teaspoon pepper
  • 2 tablespoon tomato ketchup
  • Oil 
Preparation for Gravy :

  • Heat a non-stick pan, add 1 tablespoon oil in it
  • Add garlic, ginger, green and red chilly in it
  • When garlic turns golden, add onions and spring onions in it
  • When onion turns light brown, add tomatoes in it
  • Add vinegar, soy sauce, sugar, salt, chaat masala, pepper and tomato ketchup in it
  • Add chopped green portion of spring onion and cornflour mixed with water in it
  • Cook it on low flame for few minutes 
  • Stir it well and add the Manchurian fried balls in it
  • Toss it and garnish it with spring onion green
Preparation for Manchurian Balls :





  • In a bowl, add grated /chopped (in a food processor) cauliflower and carrot in it
  • Add pinch of ginger and few cloves of garlic in it
  • Add salt, pepper and chaat masala in it
  • Mix it well, squeeze it and drain the water from it
  • Add refine flour/maida and dry cornflour in it
  • Knead it to get a dough like mixture
  • Make round balls with your palm
  • In case, you can't make balls, add more refine flour in it
  • Heat a shallow pan for deep frying
  • When oil is hot, put the first ball, if the ball doesn't stick, add more balls
  • Cook it on medium flame and let them cook from all the sides
  • Cook till they turn golden and crisp
  • Take them out and remove excess oil
  • Cook all the balls in the batches and keep them aside

Ingredients :
  • 500 grams Amla (Indian Gooseberry)
  • 2 1/2 cup sugar 
  • 1/3 teaspoon cardamom powder(choti elachi)
  • finely chopped handful almonds and cashews (kaju, badam) 
Preparation :
  1. Wash Amla thoroughly and place gooseberry (amla) in a pan, add two cup of water and cook on low flame for 15 minutes till the amla are soft
  2. Drain the water, take out the seeds from amla
  3. Heat sugar with 3 cups of water in a deep pan and cook it till it turns into a thick consistency syrup, you can add 1 tablespoon water if it's very thick 
  4. Add amla in the syrup and keep cooking on low flame
  5. Add cardamom powder and almonds in it
  6. Cook on low flame and stir continuously until mixture is thick honey like consistency
  7. Allow it to cool completely
  8. Serve it after any meal as a dessert or store it in a air tight container in a cool and dry place
Note : 
  • You can refrigerate it for few weeks
  • Store it to a air tight container made of glass preferably
  • Sterilize jar before storing (you can boil water in a container and add jar in it for few seconds and then take it out and keep it aside)

  • handful of french beans
  • 1 chopped green chilly

  • 1/2 cup chopped coriander leaves
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilly powder
  • pinch of pepper
  • 1 teaspoon chaat masala
  • pinch of asafoetida/hing
  • 3.5 cups of water
  • Salt according to taste
  • 1 tablespoon clarified butter/ghee
  • 1/4 teaspoon red chilly for garnishing
Preparation :
  • Rinse wash and drain moong dal 
  • Soak it in water for 10 minutes
  • Heat ghee/butter in a pressure cooker
  • Add cumin and asafoetida/hing in it
  • When it splutter, add garlic, green chilly, carrot, peas, french beans and coriander leaves
  • Add salt, pepper, red chilly, chaat masala and turmeric in it
  • Cook it on medium flame and stir

  • Add moong dal/lentil and oats in the pressure cooker with the vegetable masala that we have prepared
  • Stir it for a minute and pour water in it
  • Close the lid and pressure cook it for 3 whistles
  • Check the consistency and adjust it according to taste
  • Garnish it with coriander leaves
  • Serve it with yogurt or pickle

  • pinch of asafoetida (Hing)
  • pinch of red chilly

  • 2 boiled potatoes
  • 1/2 chopped cauliflower 
  • 1/2 chopped cabbage
  • 1 chopped capsicum
  • 3 chopped carrot
  • 1/2 chopped bottle gourd
  • 1/2 cup chopped beans 
  • 1 lemon
  • butter
  • Coriander leaves, chopped onion, red chilly for garnishing
Preparation for Gravy :

  • Heat 1 tablespoon oil in a pan
  • Add cumin seeds, garlic and asafoetida (Hing) in it
  • When it splutter, add onions, ginger, green chillies and garlic paste in it
  • When onion turns golden brown, add crushed tomato 
  • Add salt, pepper, red chilly, garam masala and chaat masala in it
  • Let it cook on low flame for sometime, until gravy cooks 
  • Boil vegetables in a pressure cooker, they should be soft enough to be mashed
  • Take out excess stock of vegetables and keep it aside
  •  Mash vegetables with the masher
  • Add mashed vegetables in the masala bhaji
  • Add 1 tablespoon butter in it
  • Put the lid on the pan and let the bhaji cook for sometime till it is dry and there is no water in it, stir it occasionaly 
  • Cook till it has thick dry consistency
  • Add lemon juice and mix it
  • Toast buns with butter and top it with the masala bhaji
  • Top it with chopped onion, chopped coriander leaves and red chilly

  • Boil water in a big pan, add 1 teaspoon oil and pinch of salt in it
  • Add macroni in boiling water and let it cook until done
  • Drain water and rinse with cold water and keep it aside
  • Take a deep pan and heat 1 butter in it
  • Add onions, and let it cook until they turn light brown
  • Add garlic and green chilly
  • Add salt, chaat masala, pepper, oregano, paprika and mix it well
  • Add crushed tomato in it and cook on low flame
  • Add macroni, milk, grated mozzarella cheese and cream in it
  • Squeeze lemon on the top of it
  • Drizzle with olive oil on it and serve it

  • When sabudana/tapioca turns transparent, drain the water in a strainer and keep it aside
  • Heat milk in a steel pan or a vessel and bring it to boil
  • Add sugar and cardamom in it
  • Stir and add sabudana/Tapioca in it 
  • When kheer starts thickening, cook for few more minutes and turn off the flame
  • Garnish it with chopped almonds
  • You can serve it hot or cold

  • 2 cup basmati rice
  • 1/2 cup coriander leaves
  • 1/2 cup peas

  • 1 teaspoon grated ginger

  • 1 teaspoon coriander powder
  • 1 teaspoon pepper
  • 4 cloves/laung
  • 2 cardamom/hari elaichi 
  • 4 whole black pepper
  • 1 Indian bay leaf/tejpatta
  • Salt according to taste
  • Oil
Preparation :
  1. Soak rice in water for 30 minutes
  2. In a pressure cooker, pour 1 tablespoon of oil and add cumin seeds, cloves, cardamom, whole black pepper, Indian bay leaf, garlic, ginger and green chillies
  3. Add onion and let it cook until it turn golden brown
  4. Add garam masala, coriander powder, pepper and salt in it and cook
  5. Add all the vegetable in it (cauliflower, potato, carrot, peas, coriander leaves)
  6. Add rice and 2 1/2 cup of water (as required)
  7. Let it cook till two whistle and then turn off the flame
  8. Let it cool down until pressure inside cooker comes down naturally
  9. Serve hot with raita, pickle and papad
Note : 
  1. You can add any vegetable that you like
  2. Instead of using pressure cooker, you can make it in an open pan

Preparation :
  1. Heat tawa, roast papad on medium flame and keep it aside
  2. In a bowl, add onion, tomato, cucumber, green chilly and coriander in it
  3. Add salt, pepper, dry mango powder and chaat masala, lemon juice and toss it
  4. Divide the topping in 4 equal portions
  5. Place papad on a serving plate, top it with the veggies
  6. Use same method for all the papads
  7. Serve immediately otherwise it will become soggy

This cheese pizza toast is made with toasted bread slices, spreading pizza sauce and topping veggies. You can choose your choice of toppings for the same.

Ingredients for sauce :
  • 3 medium size crushed tomatoes
  • 4 garlic cloves
  • oil
  • salt according to taste
  • 1/2 teaspoon pepper
  • pinch of sugar
  • pinch of vinegar
Ingredients for pizza toast :
  • 2 whole wheat bread 
  • 1/2 bowl shredded mozzarella cheese
  • 1/2 medium size chopped onion
  • 1/2 chopped tomato
  • 2 chopped jalapenos 
  • 2 chopped green chilly
  • 1/3 cup corn
  • 1/2 chopped bell pepper
  • 8 olives
  • 1/2 teaspoon pepper
  • salt according to taste
  • Italian seasoning for sprinkling
  • butter
Preparation for sauce :

  • Crush garlic with tomatoes
  • Heat oil in a pan, add crushed garlic and tomatoes puree in it
  • Add salt, pepper, sugar and vinegar in it
  • Cook for 5 minutes on low flame, let the water dry and tomato thicken to form a puree
  • Mix it well and keep it aside 
Preparation for pizza toast:

  • Heat tawa, toast bread from both the sides with butter, keep it aside
  • Spread sauce on the bread with a spoon
  • Spread some shredded mozzarella cheese on it
  • Add bell pepper, onion, tomatoes, corn, olives, jalapenos in a bowl 
  • Add salt and pepper and toss it
  • Spread chopped bell pepper, onion, tomatoes, green chilly and corn on the top of the cheese on bread
  • Cook it on a non-stick tawa with lid for 2 minutes on low flame 
  • Check it often that it is not burning
  • Cheese will start melting and crust of the bread will become crunchy, take it off 
  • Sprinkle Italian mix herb seasoning and serve hot.

Ingredients : 
  • 1 cup besan (Gram flour)
  • 3 pieces of whole wheat bread
  • Few chopped spinach leaves
  • 2 chopped green chillies 
  • 1 teaspoon paprika
  • Salt according to taste
  • 1 teaspoon chaat masala
  • 1 teaspoon pepper 
  • 1 teaspoon jeera powder (cumin  powder)
  • 1/2 teaspoon amchur (mango powder) 
  • Oil for deep frying
Preparation :
  • Take besan (Gram flour) in a bowl
  • Add salt, spinach, green chilly and paprika in the same
  • Add water in it and whisk it in smooth batter, make sure no lumps are formed
  • Batter should be of medium consistency (not too thick and not too watery)
  • Cut slices of bread from the center in two pieces , keep it aside
  • In a bowl, add salt, pepper, chaat masala, mango powder, jeera powder and mix it well
  • Spread masala evenly on the bread
  • Heat oil in a shallow pan for deep frying

Preparation :

  • Wash baby potatoes in running water 
  • Heat water in a pan and when it boils, immerse baby potatoes and cook until they are half boiled. Don't overcook the potatoes, they should not be soft or properly boiled.
  • Pour the yogurt in a muslin cloth and squeeze all the water from it
  • Frisk yogurt and add salt, turmeric, chilly, coriander powder, chaat masala, garam masala, pepper and lemon. Mix it well. The consistency of the marination should be semi thick.
  • Keep aside half of the marination mixture
  • Coat the mixture on potatoes and make sure they are covered properly 
  • Add the remaining mixture on the top of the potatoes and keep them aside for 15 minutes or more
  • Prepare the baking tray with silver foil and sprinkle oil on it
  • Spread it evenly on the tray
  • Preheat the oven at 180 degrees for 10 minutes
  • Put marinated potatoes on the plate giving space in between every potato
  • Bake them at 180 degrees for 25 minutes, don't forget to check the potatoes after every 10 minutes and turn them after sprinkling some oil on it, to cook it from all the sides.
  • Take them out and check if they are crispy enough
  • If you want them to be more crispy, bake for some more time
  • In a deep pan, heat oil, add ginger garlic paste and green chillies in it
  • Add remaining marination mixture and gram flour in it
  • Add 1 tablespoon of water, whisk it well and make sure that no lumps are formed
  • Add salt, spices according to taste, cook it on low flame for 10 minutes until its consistency is thick
  • Add baked tandoori aloo in it and cook on low flame for few minutes
  • Serve hot crispy tandoori aloo in yogurt based gravy with Indian flat bread
